Ghee is butter without milk solids. The advantage is that you can heat ghee higher than butter.
Preparation
Melt the butter in a pan over medium heat.
After a few minutes, the milk solids will sink to the bottom.
​
It will probably bubble and crackle quite a bit.
​
After about 8 minutes the ghee is ready.
​
Strain the ghee through a fine sieve, leaving the milk solids in the sieve.
​
Place in a jar and keep until use.
