Ingredients
1 lemon
2 cloves of garlic
10 sprigs of flat-leaf parsley
2 to 5 tbsp olive oil
salt and pepper to taste

Preparation
Grate the zest of the lemon, grate the garlic and chop the parsley.
Place the lemon, grated garlic and finely chopped parsley in a container.
Add lemon juice, salt and pepper to taste.
Add the olive oil, this ensures the binding.
Delicious on oxtail stew , osso bucco and lamb shank
