Shahi Paneer Masala

Ingredients
2 to 4 tbsp ghee (or clarified butter
we used sunflower oil)
200gr paneer
If you can't buy it, it is
also possible to use a young meltable
soft cheese.
2 onion
5 tbsp curd/quark/tirkse yoghurt
100g cashew nuts
3 tomatoes
2 red chili peppers
2cm ginger
10 cloves garlic
10 grains black pepper
1 tsp cumin powder
3 cloves
3 small cardamom
1 black cardamom
1 bay leaf
1 cinnamon stick
2 tbsp garam masala
0.5 tsp red chili powder
0.5 tspturmeric powder
0.5 tsp coriander powder
0.5 tsp fenugreek
Other supplies
saucepan, saucepan, hand blender or blender


This is one of my Indian colleagues' favorite dish.
Mis en place
Onion paste

Chop the onions coarsely

Place in a mixing bowl

Put the hand blender on top and make a smooth paste

Tomato/chili paste

Chop the tomatoes and chili coarsely

Put in a mixing bowl

Put the hand blender on top and make a smooth paste
Ginger/garlic paste

Grate the ginger and then the cloves of garlic

Put in a bowl
Cashew nuts

Put them in boiling water for 5 to 7 minutes

Drain
-
Mash into a paste

Put in a bowl

Paneer
-
Cut the paneer into cubes
Chop the red chile peppers small
Preparation
Take the frying pan and add the ghee/butter, put on medium high heat/warmth.
Add the onion paste.
Fry the mixture until it becomes light brown.
Then add the ginger/garlic paste, fry briefly.
Then add the;
1 tbsp cumin powder,
10 crushed black peppercorns,
3 cloves,
1 bay leaf,
3 crushed small cardamoms,
2 crushed black cardamoms,
1 cinnamon stick and
the chili powder.
Fry and stir regularly for about 10 minutes.
Add the tomato/chili pepper paste.
Add the chili powder and turmeric powder and stir well.
Add the cashew nuts and let it simmer for a while (5 minutes) (stirring).
Stir! keep stirring!
Add coriander powder and the curd/cottage cheese.
Add the fenugreek and 2 tbsp garam masala.
Stir! Keep stirring! Every 2 minutes for 10 minutes (so 5 times).
If the mixture is too thick, you can add some cream, milk or ... water.
Add the small cubes of paneer and ....
.... you're done.
