Sour herring salad

Ingredients
1 jar of pickled herring
500 g beetroot (pre-cooked)
1 large onion
100 g pickles/cornichons
3 tbsp mayonnaise (you can also replace Turkish yogurt)
some pepper

plastic container or glass bowl (both sealable)
I can be really hungry for this sometimes. Fresh and sour on a piece of toast (nice and retro), toasted sandwich, baguette or just a scoop in your mouth! Just made, tasty, evening in the fridge, chilled...... delicious on a hot day with drinks!!

Mis en place
Chop the onion.
Cut the gherkins/cornichons small.

Cut the beets into cubes of half a cm (but not very carefully, not too small and not large chunks....)
You can even grate, but I prefer cubes.

Herring:
Remove the dorsal fin from the pegs,
Cut the halves apart and place on top of each other
cut in half lengthwise
Cut the strips into pieces of 0.5 to 1 cm
Preparation

Pour everything into the bowl or plastic container.
Add some fresh pepper.
Stir well so that everything has a faint red/pink color (it doesn't look like much! but it tastes good!).

Done! Let the drinks begin.

Also delicious with 3 or 4 boiled potatoes cut into pieces.
